ORGANIC CERTIFIED GLUTEN FREE OATS
We use organic certified gluten free oats in all our Moroccan Energy Squares recipes. We only use the finest Non-GMO, Organic Certified Gluten Free Oats; a great source of important vitamins, minerals, fiber and antioxidants, oats help to improve bowel function, to spread the rise of blood sugar over a longer period of time to prevent sugar spikes and crashes. We grind our oats and brown them in the oven before mixing them with the other ingredients.
ORGANIC MILLET FLOUR
We brown our organic millet flour and use it in all our Moroccan Energy Squares recipes. Millet Flour is wonderfully nutritious and a good source of protein, essential amino acids and dietary fiber, like other healthy whole grains, and it is a good source of vitamins and minerals, including folic acid, zinc, and iron. A 1/4-cup serving of dry millet contains 210 calories and 2.5 grams of fat. It delivers 5 grams of protein, 3 grams of dietary fiber, and 15 percent of the daily value for magnesium, an important mineral involved in many of the biochemical processes in your body.
ORGANIC CERTIFIED GLUTEN-FREE ALL PURPOSE FLOUR
We use a Certified Organic Gluten-Free flour that is a mix of many flours (Brown rice, Quinoa, Buckwheat, Amaranth), it contains as well Tapioca starch, Ground Flax Seeds, Baking Powder No Aluminium, Guar Gum and Xantham Gum, very healthy flour!
We use it in our Gazelle Horns wrapped in a thin crisp pastry, Fekkas, Baghrir and Ghriba Bahla.
HOMEMADE ALMOND BUTTER
All our Moroccan Energy Squares contain almond butter. Our homemade almond butter is made with just one ingredient- almonds! There’s no added oil required for this recipe, as the almonds will release their gluten-free oils during the process.
ORGANIC HOMEMADE TAHINI
All our Moroccan Energy Squares contain organic homemade tahini. We make our own tahini. Before grinding the sesame seeds, they are slowly roasted at the lowest possible temperature which helps release their nutty flavour. The result is a creamy and smooth sesame seed butter. These seeds are an excellent source of copper, and a very good source of manganese. They are also a good source of calcium, magnesium, iron, phosphorus, vitamin B1, zinc, molybdenum, selenium and dietary fiber.
DEGLET NOUR DATES
We use dates to gluten-freely sweeten our Dark Chocolate Energy Squares and our Matcha Pistachio Crunch Energy Squares. Commonly referred to as the “queen of all dates”, they have a firm flesh and sweet, delicate honey-like taste. Along with having a low glycemic impact and thus being very helpful balancing blood sugar, dates are also a source of antioxidants. Did you know that a date fruit has more than 25% more potassium than bananas while being free of fats, cholesterol and sodium?
We do our own date paste from scratch. We steam the pitted dates; remove the steam dates and save the water; puree the dates in a blender add the water, some orange blossom water and a pinch of cloves, until they attain a paste-like consistency; “et Voila!”
ORGANIC RAW HONEY
The “Authentic” Moroccan Energy Square, is the only Energy Squares sweetened with two types of honey, Buckwheat and Wild Flower.
We buy our raw local honey directly from a trusted beekeeper. Raw honey contains a wide variety of nutrients. It has approximately 22 amino acids, 31 different minerals and a wide range of vitamins and enzymes. What’s most impressive about raw honey is that it contains nearly 30 types of bioactive plant compounds. These are called polyphenols, and they act as antioxidants.
ORGANIC UNREFINED COCONUT OIL
Organic unrefined coconut oil is well known for its beneficial medium chain triglycerides (MCTs) which are frequently consumed by high-performance athletes and many others who embrace healthy fats as energizing and metabolizing fuel for the body.
ORGANIC RAW HEMP SEED
We use organic raw hemp seeds only in our Moroccan Energy Squares recipes.
Hemp seeds are a great protein source, as more than 25% of their total calories are from high-quality protein. That is considerably more than similar foods like chia seeds and, whose calories are 16–18% protein. Hemp seeds are also a great source of vitamin E and minerals, such as phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc. Hemp seeds are the seeds of the hemp plant, Cannabis sativa. They are from the same species as cannabis (marijuana) but a different variety. However, they contain only trace amounts of THC, the psychoactive compound in marijuana. Hemp seeds are exceptionally nutritious and rich in healthy fats, protein and various minerals. Technically a nut, hemp seeds are very nutritious. They have a mild, nutty flavor and are often referred to as hemp hearts. Hemp seeds contain over 30% fat. They are exceptionally rich in two essential fatty acids, linoleic acid (omega-6) and alpha-linolenic acid (omega-3).They also contain gamma-linolenic acid, which has been linked to several health benefits.
ORGANIC FLAX SEEDS
We use Organic Flax Seeds in all our Moroccan Energy Squares recipes.
Loaded with nutrients such as omega-3 fatty acid ALA, lignans which have powerful antioxidant and estrogen properties. With so much fiber packed in each tiny seed, adding flax seeds to your diet promotes regular bowel movements and can improve your digestive health.
ORGANIC WHITE CHIA SEEDS
We use Organic Flax Seeds in all our Moroccan Energy Squares recipes.
These are an excellent source of omega-3 fatty acids, rich in antioxidants and provide fiber, iron and calcium.
ORGANIC COCOA BUTTER
Our Homemade Dark Chocolate and White Chocolate are made with Cocoa butter. Cocoa butter melts like a dream. When you add cacao powder, it becomes super velvety and doesn’t separate.
Once it sets, it doesn’t melt in your hands (like coconut oil). It just tastes better, creamier, more delicious.
Considered one of the most stable fats available, cocoa butter is rich in omega-6 and omega-9 fatty acids, which support overall health. Since it comes from nutrient-packed cacao beans, cocoa butter is a good source of gluten-free antioxidants which may boost the immune system, support heart health, and lower inflammation.
ORGANIC COCOA POWDER
Cocoa powder is highly appreciated for its antioxidant benefits. But most importantly it causes the brain to release endorphins, which decrease levels of both stress and pain, and make us feel good!
ORGANIC CACAO NIBS

Raw organic cacao nibs are an excellent source of fiber and iron. A single one-ounce serving of cacao nibs provides 18% of the DV for fiber and 21% of the DV for iron. They are also chock-full of protective antioxidants and magnesium.
ORGANIC SEMI-SWEET DAIRY, SOY FREE CHOCOLATE CHIPS
ORGANIC MATCHA GREEN TEA
Matcha is known to be the finest green tea in the world. Shade-grown (to enhance chlorophyll content) and hand-picked, it is made from the finest whole tea leaves. After stems and veins have been removed, the leaves (aka Tencha) are carefully stone ground on artisanal granite mills to produce a very fine (5-10 microns) powder which means you are consuming the entire leaf when drinking Matcha.
It contains high levels of antioxidants (including the powerful EGCg), amino acids, vitamins, minerals (such as selenium, chromium, zinc, and magnesium), chlorophyll and fiber.
We only use Erythritol in small quantity to sweeten our white and dark chocolate.
Erythritol is a sugar substitute. It gives the same sweet flavor as sugar but has fewer calories. Since erythritol is a small four-carbon molecule, it gets easily digested in your gut. Also, because it has a very low glycemic index, it gets digested slowly and almost completely. Unlike sucralose, xylitol, sorbitol or mannitol, whose remnants can be found in the large intestines, about 90% of erythritol gets absorbed.
ORANGE BLOSSOM WATER
We use Orange Blossom water in all our Moroccan Macaroons and to make our homemade date paste.
In Morocco, orange blossom water is a symbol of luck and it has a strong scent. Orange flower water is made using orange tree blossoms and a steam distillation process. The resulting fragrant water has found its way into many culinary uses in Moroccan cuisine. Due to its strong flavor because it is produced from bitter orange blossoms, Orange Blossom Water, called “Zhar” is often used as an ingredient in traditional Moroccan sweets and patisseries, and it goes very well with dates and honey.
ORGANIC ANISE SEEDS
We use organic anis seeds in all our Moroccan Energy Squares.
Packed with nutrients, the anise seed is rich in iron and has been shown to improve digestion. An essential spice in the Moroccan kitchen, it has a sweet and fragrant aroma similar to fennel but more potent with a stronger note of licorice.
ORGANIC FENNEL SEEDS
Adding a subtle anise flavor to our Moroccan Energy Squares, these seeds provide important nutrients such as vitamin C, calcium, magnesium, potassium and manganese. They are also rich in powerful antioxidants like chlorogenic acid, limonene and quercetin, and they are packed with fiber.
ORGANIC CARDAMOM SEEDS
This spice is used ground in many Moroccan dishes. It combines deliciously with cinnamon and nutmeg. Cardamom’s flavor is complex, slightly sweet, floral, and spicy with citrus undertones. It added a strong unique taste and an intense aromatic fragrance to all our Moroccan Energy Squares. Cardamom contains antioxidants, it has anti-inflammatory effects and is helpful for digestion.
Other common spices traditionally used in many Moroccan dishes and sweets include cinnamon. Cinnamon contains large amounts of highly potent polyphenol antioxidants and has been shown to significantly increase sensitivity to the hormone insulin.
Nutmeg is a spice mostly used for special celebrations dishes. It can be found in powder but I personally prefer to use nutmeg dried nuts and grate a small portion, this way, the flavor is strong and the intensity is preserved. Nutmeg is a popular spice with a long list of health benefits, including its ability to relieve pain, indigestion, and insomnia and improve brain function.
All our products contain Arabic Gum. It is used in cooking as a stabilizer, binder and flavoring, most commonly as a spice in sweets and pastries. Arabic Gum crystals are crushed and added to all our recipe to add flavor and texture. Providing a source of prebiotics and soluble fiber. Feeding, healthy bacteria probiotics in the gut, Having anti-carcinogenic, anti-inflammatory and antioxidant effects, thanks to its tannins, flavonoids and resins.
SALT, HIMALAYAN, NATURAL PINK
Himalayan sea salt contains over 80 different minerals that are necessary for health, including calcium, chloride, iron, magnesium, phosphorus, potassium, and sodium.
HOMEMADE ALMOND FLOUR
Our almonds are raw and unpasteurized. Compared to all other nuts, almonds are the most- packed with nutrients. They’re a rich source of monounsaturated fat, and also vitamin E, phosphorus, magnesium, calcium and iron. Plus, they’re a fantastic source of gluten-free protein! We make our own almond flour from fresh almonds that we blanch, peel and grind into a fine powder. We use Almond flour in all our Moroccan Macaroons.
HOMEMADE WALNUT FLOUR
Eating walnuts not only nourishes you but also the beneficial bacteria that live in your gut. This promotes the health of your gut and may help reduce disease risk. Walnuts are an excellent source of antioxidants.
Pistachios are one of the oldest nuts dating back to 6000 BC and believed to have originated in the mountain ranges of West-Asia and Turkey region.
The pistachios is one of the few nuts that contain most of the nutrients required by humans for complete health such as carbohydrates, proteins, fats, dietary fiber, phosphorus, potassium, thiamine, vitamin B-6, beta-carotene, lutein and zeaxanthin, calcium, iron, magnesium, zinc, copper, manganese, riboflavin, niacin, pantothenic acid, folate, and vitamins E, C, A, and K. Pistachios have one of the highest protein content compared to other nuts.
Our Chocolate Hazelnut Macaroon are topped with hazelnut.
Hazelnuts are rich in phenolic compounds that have been shown to increase antioxidant protection in the body. It is best to eat hazelnuts whole and unroasted to ensure you get the highest concentration of antioxidants. We use hazelnut on top of our macaroon chocolate.
ORGANIC LEMON ZEST
We use fresh organic lemon zest only in our Moroccan Orange Blossom Macaroon recipe. Lemon contains a list of vitamin, mineral and fibre like calcium, potassium and Vitamin C, which gives your body a nutritional boost.
ORGANIC GINGER ROOTS
We grate fresh organic ginger roots into our Coconut Ginger Macaroon; it gives a subtly spicy aroma… and blends perfectly with the coconut. Ginger is a popular spice. It is high in gingerol: a substance with powerful anti-inflammatory and antioxidant properties.
ORGANIC CANDIED GINGER
Our Coconut Ginger Macaroon is topped with a piece of candied ginger, that we previously soak in water to remove the sugar content before topping our Macaroon.
We do make our own homemade candied ginger! The flavor is much fresher than when store-bought. Anti-Inflammatory Effects: candied ginger can reduce inflammation and relieve the pain associated with it (see the recipe in our FAQ page).
ORGANIC UNSWEETENED SHREDDED COCONUT
It contains a variety of minerals, including manganese, copper, selenium, phosphorus, potassium, and iron. We use the unsweetened shredded coconut in our Coconut Ginger Macaroon recipe.
ORGANIC HOMEMADE GHEE
Our Moroccan Macaroon recipe, Authentic Almonds & Orange Blossom and our Gazelle Horns wrapped In a thin crisp dough, contains ghee. Ghee is a clarified, unsalted butter with the milk proteins removed. It has a high smoke point, making it perfect for cooking, and has an incredible flavor. Many people who cannot tolerate dairy can handle ghee. It’s also used widely in Indian cuisine. But did you know that the Ghee is not only a specialty of Indian cuisine? It is indeed a culinary tradition widespread in Morocco, known as smen. But while ghee is clarified to remove the milk solids and moisture, smen is fermented — which gives it its funky, cheesy aroma. Ghee is used in many recipes in Morocco cuisine, especially in sweets.
ORGANIC COFFEE BEANS
Our Coffee Macaroons are blended with real coffee espresso and topped with a fresh roasted coffee bean.
GRADE “A” FREE-RANGE EGGS
We use free-range eggs in all our Moroccan Macaroons.
Eggs labeled as free-range must be produced by hens who have unlimited food, water, and access to the outdoors during their egg-laying cycle.
ORGANIC EVAPORATED CANE SUGAR
All our Moroccan Macaroons are sweetened with Organic Evaporated Cane Sugar. We reduced the amount of sugar as much as possible compared to the traditional recipe.
Evaporated cane sugar is intended to be a less-processed, more nutritious form of cane sugar than either white sugar or brown sugar. Our macaroons are sweetened with cane sugar.
JAM AND PRESERVE APRICOT
All our Moroccan Macaroons contain a small amount of Jam, we add a Tbsp of jam to reinforce the chewy texture and make it last. Jam and preserves are all made from fruit mixed with sugar and pectin. In preserves, the fruit comes in the form of chunks. Preserves will have more fruit in them than jam will.
